English Winter Thyme (Thymus vulgaris).

English Winter Thyme is a hardy, evergreen herb that can be easily grown from seeds. To sow and grow, follow these steps:

1. Sow seeds in early spring after the last frost date.
2. Prepare the seeds by mixing them with fine sand or vermiculite.
3. Choose a suitable container with drainage holes and fill with a well-draining seed starting mix.
4. Soak the seeds thinly, ensuring good contact.
5. Water gently, avoiding over-watering to prevent fungal issues. Cover the tray with a clear glass or plastic wrap to maintain humidity.
6. Place the tray in a bright, sunny spot with temperatures between 65-70°F (18-21°C).
7. Germination takes 14 to 30 days.
8. Transplant the seedlings outdoors, spacing them 6-12 inches apart. Plant them in well-draining soil with at least 6-8 hours of direct sunlight per day. Water regularly but don't over-water.
9. Prune the thyme lightly after flowering to encourage bushy growth and more foliage.
10. Harvest the thyme leaves once the plants are established, harvesting before they start to flower.

Keep short and bushy by harvresting light clipping often. If left to flower the blooms are impressive and lend a mediterranean ambience to a favoured spot, whilst also attracting our pollinator friends.
